Saturday Stirrings ~ Vegan Chocolate Pudding

One of the patients at the chiropractor’s office where I work brought in a vegan cookbook as a gift for our acupuncturist.  Just in case you are wondering, vegan means no animal products are used at all, including dairy. The patient was due in today for another appointment, so our acupuncturist wanted to make sure he had tried one of the recipes.  Not only did he make a recipe, he brought it in to share with the class and it was delicious.  This is the recipe he made.

Vegan Chocolate Pudding

  • 2 cups fresh coconut meat (if you use the shredded coconut from the store, it’s not going to truly be vegan because of the way they process the coconut.  It’s your choice, but I wanted you to know)
  • pinch salt
  • 1/2 – 3/4 cup agave nectar
  • 1/3 cup maple syrup
  • 3/4 cup coconut water (just enough to liquefy)
  • 1/2 cup cocoa powder

Mix in food processor or blender until smooth.  Pour in bowl. Refrigerate overnight.

  1. How great that you can testimfy to it’s tastiness. These kind of recipes kind of scare me unless they come recommended. I have made some real bombs with ingredients like tofu. ; )
